This is a very simple recipe, but if you have yet to try the combination of watermelon and feta yet, I urge you stop reading at once and run out to by the necessary ingredients before we run out of hot summer days (well, perhaps continue reading the rest of this post so you know what those ingredients are). This is a summer salad at its best, very refreshing, very light, very yummy.
WATERMELON FETA SALAD WITH PISTACHIOS + MINT
Ingredients
1/4 cup toasted pistachios
1 cup roquette
1 medium watermelon chopped
1 small bunch fresh mint leaves
1/2 cup crumbled feta cheese
Freshly cracked pepper
Extra Virgin Olive Oil
Juice of one lime
Instructions
To toast the pistachios, place them in a skillet over medium heat for a couple minutes – once you can start to smell them, they are ready
Let them cool slightly and then give them a good chop
Assemble the rest of the ingredients in a bowl, tearing up the basil and mint leaves a bit, and top with pistachios
Drizzle with olive oil and balsamic, finish with cracked pepper
*This salad really doesn’t need much in terms of dressing, I didn’t add any salt because the feta is already very salty, and since the watermelon is so juicy, you really don’t need much oil or vinegar – just a squeeze to add a little flavor
