Coconut Chocolate Granola

Vegan chocolate granola with tons of coconut, hazelnuts and almonds. Lightly sweetened with maple syrup and orange juice.

Breakfast has got to be my favorite meals of the day – probably because it’s always paired with a steaming cup of delicious hot coffee. I am a morning person, always have been, I love waking up and starting the day with a delicious meal. Breakfast options are endless, you can have sweet, you can have savory, you can combine both and its still delicious. Granola is one breakfast option I never get sick of, and when its homemade its just that much better.

To me, making granola at home is pretty much fool proof – as long as you don’t burn it to a crisp. Choose any combination of nuts and flavors – drown it in maple syrup and its bound to be delicious! Having said that, I do find it hard to get the little delicious clusters to form when making granola at home, but in this recipe I succeeded with the help of a little dark chocolate. This granola is not overly sweet, but I find it just the perfect amount of sweetness, mixed with berries and yogurt and I hope you do too!


CHOCOLATE COCONUT GRANOLA

 Ingredients

 2 cups rolled oats
1 cup sliced almonds
1 cup unsweetened coconut flakes
1 cup chopped hazelnuts
3/4 cup chopped almonds
1/4 cup cocoa powder
Pinch of salt
4 tablespoons melted coconut oil
1/4 cup maple syrup
1/3 cup orange juice
100g good quality dark chocolate, chopped ( I used 70% cocoa)

Instructions

Preheat the oven to 350 degrees celsius

In a large bowl combine the oats, almonds, coconut, hazelnuts and almonds. Add in the cocoa powder and salt so that it is well incorporated. Add in the wet ingredients and stir it all together – making sure everything gets coated. Add of splash of juice or water if it seems dry.

Spread out the granola in a even layer on a baking sheet

Place in oven for 30 minutes or until golden and crispy, stirring occasionally.

5 before taking it out of the oven, add in the squares of dark chocolate and stir one last time, the chocolate will melt just slightly and helps form delicious clusters

Remove from oven, set aside and let cool completely

Top with yogurt & fresh berries and enjoy!
